This recipe is guaranteed to make you feel like a magical fae being. The flavour is so delicate and fragrant, with floral notes and a mild cherry taste. Use as normal jam or mix in to lemonade for a gorgeous spring drink! It is incredibly easy to make so i would absolutely recommended giving it a try!
Ingredients
- 2 cups of Japanese Cherry Blossom petals (pink, not white) with as much green stem removed as possible
- 1.5 cups of water
- 2 cups of sugar
- A splash of lemon juice
You can also add other flower petals such as rose, or fruits such as strawberries if you wish!
Method
- Empty all the ingredients in to a heavy bottom pan and slowly bring to boil
- Allow to boil gently until it reaches a syrup consistency
- Add a drop of your jam on to a cold plate and if it sets to a jam consistency it is done!
- Pour in to a clean, sterilised jar, seal and allow to cool before eating. The jam will continue to thicken as it cools.

If you don’t enjoy your jam chunky, you can mash it with a potato masher before you pour it into jars, however be careful as it will be extremely hot and sticky! This should last up to 4 weeks in the fridge unopened.
